A regular on-the-go breakfast item in our household this smoothie packed with the delicious goodness of fresh mango and coconut is everything that we love about summer!
Why is this good? Mangoes are rich in Vitamins A,C and contain a high level of carotenoids (which are great in warding off the common cold). Mangoes are low in fat, low in calories but very high in fiber iron, potassium and protein.
Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow's milk, coconut milk is lactose free so can be used as a milk substitute by those with lactose intolerance.
Ingredients: (makes 2-3 servings)
- 1 cup fresh mango puree
- 2 cups thin coconut milk OR 1 cup coconut milk + 1 cup coconut water
- 1 tbsp black chia seeds
To make:
1. Put all ingredients into a blender and blitz until smooth.
2. Pour into glasses of your choice and sprinkle a few chia seeds on top to make it look pretty :)
